Organic viticulture and manual grape selection

Our philosophy of organic viticulture It's reflected in every stage of the process. We carry out a double manual selection: first in the vineyard, bunch by bunch, and then in the winery, ensuring that only the highest-quality grapes make it into our wines.

The harvest takes place during the early hours of the morning to prevent high temperatures from affecting the quality of the grapes. The boxes used for harvesting are 10kg, smaller than those used for other grape varieties to facilitate the harvest. Upon arrival at the winery, the grapes are manually sorted for a second time. Sauvignon Blanc Winemaking SPEAKS
