Bodegas HABLA questions the canons of traditional oenology with an innovative research project, a pioneer in Spain, with cryophilic yeasts and a selection of coastal white varieties with Atlantic influence
TALK ABOUT THE SEA… It is a unique and surprising experience, designed to revolutionize the established canons in traditional oenology. It is an exotic underwater wine, whose fermentation takes place in the depths of the Atlantic Ocean, in the Bay of Saint Jean de Luz; and represents in itself a true declaration of intentions on the disruptive philosophy and innovative character of Bodegas HABLA.
The underwater wine HABLA DEL MAR… is a blend of different white varieties from vineyards on the Atlantic coast, specially selected by the winemakers from HABLA, based on the experience and know-how of the winery. The Atlantic influence favours the saline character of the wine, which is subsequently reinforced by a second fermentation under water - the first one takes place in the winery.
The Patented underwater fermentation system, pioneering in Spain, affects the morphology of the wine and gives it unique organoleptic qualities. This adventure under the sea takes place in hermetically sealed tanks, where there is no possibility of the wine escaping. carbon generated during natural fermentation on the seabed. This level of carbonation dissolves and becomes part of the extraordinary character of HABLA DEL MAR… At the moment of emergence, the wine is filtered and bottled as quickly as possible so that it does not lose that sparkling point that accentuates its freshness and salinity.
A PIONEER UNDERWATER WINE IN SPAIN
Although in Spain there are wines that are submerged once bottledBodegas HABLA is the only one that carries out the second fermentation of wine under the sea, using a mixture of cryophilic yeasts that allow working at low temperatures. This is where the HABLA DEL MAR… experience begins, where a team of divers, led by the team of winemakers from Bodegas HABLA, controls the entire process, which is influenced by pressure, temperature, the depth of the water in which it is submerged and sea currents.
The underwater fermentation process takes place in 400-litre tanks resting at a depth of 15 metres in the bay of Saint-Jean-de-Luz, a Basque-French town. It is here, at the bottom of an artificial reef, where the wine remains in contact with its lees, at an average temperature of 8ºC, with an atmospheric pressure of three bars and subjected to a bazuqueo constant generated by the movement of waves and tides.
The continuous movement of the ocean, combined with the effect of pressure on the lees, intensifies the structure and aromas of the wine, with a notable romantic and melodic character.

TASTING NOTES: NEW VINTAGE SPEAKS OF THE SEA…
With a lower alcohol content than previous editions (only 10.5%) and a fresh, renewed image, the new vintage of TALK OF THE SEA… It represents a refreshing journey towards the most unexpected sensations in a dry white wine; completely surprising and extraordinary.
As we contemplate the wine in the glass, we are greeted by a Bright lemon yellow color with slight steely nuances.This radiant hue is the first indication of the liveliness and freshness that awaits us, and it radiates the unique origin of its fermentation under the sea waters.
With a subtle fragrance, its aroma stands out seasickness evoking the sensation left by the sea breeze on the skin. A First saline note reminds us of seafood to give way to the vegetal character typical of some species of algae. These marine nuances are intertwined with the ripe sweetness of quince and the floral delicacy of chamomile.
In the mouth, this wine reveals all its expression with an effervescence that, although fleeting in the glass, provides a feeling of freshness and dynamism at first contact.
